Tri tip originated in  Santa Maria, CA.

 

This cut of beef comes from the bottom portion of the sirloin.    Coming from the sirloin you know it has a ton of flavor.

 

These steaks are large, averaging about 2.5 lbs.

 

Since they are so big, one tri tip should feed about 4 people.

 

Tri tips are unbelievable.    Grill or roast them whole to maintain juiciness.    Place it in the smoker with a marinade or dry rub.    Then just slice against the grain.

 

One trick to cooking these:    cook them fat side up.    Let the juices and flavor run over the meat, not into the bottom of the grill or pan.

 

It has also become popular with many customers to cut tri tip into small cubes and make a Texas style chili.

 

Tri tip is a steak that is a little less expensive.    There is a lot of value in this cut of beef.    Give it a try.    You won’t be disappointed.
