Stuffed Chicken Breast
One of our specialties at
Eckerlin Meats is stuffed chicken breast. We carry different
types for all people's tastes including Italian stuffed chicken
breast, broccoli and cheese, spinach stuffed chicken with
artichoke and cordon bleu.

Saltimbocca
Our Italian stuffed
chicken breast is a play on the Italian dish Veal Saltimbocca.
Obviously there is no veal involved here but with do stuff the
chicken breast with a delicious amount of prosciutto, provolone
cheese and a hint of sage.
Spinach Artichoke Stuffed
Chicken Breast
If we had a best sellers list
out Spinach Artichoke chicken breasts would probably be on top
of the list. We mix a unique blend of spinach, cream cheese,
artichoke hearts, garlic, and parmesean cheese. After putting a
pocket in the chicken breast we cram a more than generous
amount of the spinach artichoke dip in each piece of
chicken.
Broccoli and Cheese
Stuffed Chicken Breast
Our broccoli and cheese
stuffed chicken breasts are also very popular. We chop up fresh
broccoli and a little red onion. We take onion and broccoli and
add cheddar, american, provolone and swiss
cheese.
Chicken Cordon
Bleu
Our chicken cordon bleu is a
classic. We take fresh sliced smoked ham and swiss cheese and
load it in the chicken breast. After stuffing each chicken
breast we then coat each piece with cornflake crumbs. All that
you need to do is place them in the oven.
Chicken Rollatini
These stuffed chicken breast
are filled with a delicious mixture of asparagus, salami,
provolone and parmesean cheese. Bake them in a tomato
sauce for extra flavor!
Preparation
One of the most frequent
questions we get is: How do I cook the stuffed chicken
breast?
Each chicken breast is tied to
keep as much of the stuffing in as possible. All that you have
to do is place them on a baking sheet or in a pyrex
dish.
Make sure the oven is
preheated to 350 degrees.
Bake approximately 35 minutes.
Everyone's oven is a little different but 35 minutes is a
pretty good estimate of when they'll be finished. Let the
stuffed chicken breast rest a couple minutes then
enjoy!
