City Chicken
City chicken are a unique
dish. Traditionally city chicken were made of both pork
and veal. Although, at Eckerlin Meats, we can custom make
a pork and veal city chicken, today ours are made strictly of
pork.
City chicken is easy to
prepare. Just coat the skewered meat with a little
flour or breading, brown them in a skillet, add
liquid, and braise the city chicken about an hour and a
half.
